Clutch issues

Hey, so I purchased a A4 avant from a friend a couple months ago. It's a 2.7tt with a 01e 6 speed. It's a stage 3 ish car from what I know currently, but from sitting and all I've been taking it easy on the car till it gets retuned. Helped him install new rear main seal and clutch while he owned it. New clutch, pressure plate, single mass flywheel all parts have maybe 4 or 500 miles on it he chose a puck style clutch disk and kit was rated for 500+hp I believe. Car was sitting for a while and I'm getting it back road worthy. So as I've been driving it lightly clutch holds well but I haven't really tried to put power to it. it does have a high pedal like other audis ive driven and that's like most accounts I hear online with people with SAC style pressure plates as well which I do have. I have tried to test the holding strength of the clutch and it will hold unless I dump the clutch(like doing 40mph in 4th or 5th and reving to 4K and dropping it) haven't tried to launch it at all. But it did hold 20+lbs in 4th on the hwy under 3/4 throttle. I've done some research on the SAC pressure plates and their adjustments. I'll post some pictures here of it in the car, pardon my "inspection hole" I made to see what's going on but I had to see what was up after re bleeding the slave and re checking the pedal assembly didn't have any effect. I can see that the release bearing is resting a little too close to the pressure plate and when I adjust the mechanism back to the new setting it returns to the proper distance and the petal feels a lot better but the next time I depress the clutch pedal the SAC mech readjusts to the before position as depicted in the pictures with the SAC springs extended. Also shows the current clutch material level and from what I can see there is very minor heat damage so far to the flywheel. So I guess what I'm asking is has anyone experienced something like this, I see a lot of stories about these pressure plates and the pedal height but not the slipping. Don't want to take the clutch back out it I don't have to, I'd prob just replace it with a non adjustable unit for piece of mind anyways but if anyone has any suggestions I'm almost at my wits end here lol.
