can anyone tell me how to change my brakes on my 2001 allroad?
do any special tools?

The front ones are easy. Remove the wheel, undo two bolts to free the caliper, push the pistons in, swap the pads and reverse to reassemble.

The back ones are harder. The difference is the need to retract the handbrake-operated mechanism, which pushes the piston in. I find a large G-cramp and a pipe spanner work, but it's fiddly.

You need to apply pressure to push the piston in, and at the same time turn the piston to screw it back onto the self-adjuster. The G-cramp has a rotating pad, which when inside the piston recess allows this to happen.

The fiddly bit is keeping everything lined up. Extra hands might help.

Incidentally, don't top-up the brake fluid before doing this - the level will rise quite a lot when the pistons are pushed back.
