Alright, I am planning on doing a lot of upgrades to my 01, 1.8t A4 quattro. I plan on getting the K04 turbo, cat back exhaust, and APR chip upgrade for my baby. I was wondering if an intercooler is greatly important? What exactly are the benefits of getting one?

Depending on what map you go for will determine if it's worth your while.
The benefits of the FMIC are that it will keep the intake temp way down and Turbo car love cold air. The SMIC works well with stock setup and can cope with a mildly tuned K04 but hard driving can heat soak the SMIC and cause you to loose power as it raise the temp of the intake air which mean less power.

There is a larger SMIC you can get for the A4 but I would go straight with a FMIC if going BT as it will give you more scope to run a larger turbo.
RaceTec do a great FMIC but you can pick up a good Japanees unit of ebay made by Autobahn88 and go for around £250 where as the Racetec unit will cost around £400.
