Default Oil temp stuck around 60 - Why?

At my last service I had the oil temp sensor changed as it was intermittently failing and the dial on the dash would drop, but generally always read 90 degrees when it worked. Now that the sensor has been changed, the oil temp wont go above 60..

I read some other posts online which reckoned that the thermostat was prob stuck open so I've changed that today and filled coolant back up but temp will still not rise..

Any ideas?? and what if any damage is this causing when i'm driving???

Have had similar readings on my A6, I think it is more the gauge sticking, as a heavy tap on the dashboard usually activates the gauge again for a short while.
Maybe something to do with dry connections.

Defo not stuck gauge, is definately not heating up.
