I had the same issue with my 1.8T wich turned out to be sludge blocking the oil feeds, after a little reading decided to do a diesel flush.

You will need to buy enough diesel to fill the engine to the top
2 crappy oil filter
1 good oil filter
1 lot of cheap oil
1 lot of good oil
Set of spark plugs


1. Drain the oil and then change the oil filter with a crappy one.
2. Fill the engine to the top with diesel (Make sure you do not turn the engine over even put the key in the ignition or you will bend the pistons or worse).
3. Leave the car for 24hrs more if you can.
4. Drain the engine of all the diesel and remover the oil filter and replace with another crappy one and replace the spark plugs.
5. Fill her up with the crappy oil to normal level and let her tick over for an hour with out no revving the engine.
6. Perform another oil change using but this time put the good oil filter on and the good oil.

You should be all good and hopefully your oil light issue should have been resolved.
