Don't do it... it's not worth it..
haven't done a quattro conversion but I have done an auto to manual conversion on a 200 turbo..
it's a long time ago, and I did it in my spare time:
some things to remember
The auto vs manual have a different floor panel below the shift lever spot welded into the floor, this must be drilled/cut out and changed, as the auto type only has a small hole and grommet for a cable, no space for a manual shift linkage.
When you fit the pedals from the manual the (auto) foot-rest must be removed to get clearance for ther clutch pedal, so the carpet must be cut neatly or removed! and it is difficult to make good the carpet around this area after, it won't look right unless you change the whole carpet!
It's a bit of a back breaking excercise the work alone which must be done inside the car ( pedals etc), the easy part is fitting the gearbox.
